Age of the vines: 40 years
Cultivation of the vineyard: Organic vine-growing as to respect the environment and obtain the best organoleptic grapes’ quality. The vines grow on a trellising and on partly grass-covered ground.
Wine-making and maturing: Hand harvesting. After pressing, the Chardonnay undergoes fermentation and ageing in 400L barrels (one- and two-wine barrels). Secondary fermentation is achieved through natural sugars. Aged for 18 months on lees (sur lattes). No dosage.
Wine tasting: A great sparkling wine with a nose of fresh white flowers, a delicate palate that is lively, vinous and refined, and a fine, persistent mousse.
Best served with: A gastronomic sparkling wine, to be enjoyed on its own as an aperitif, or paired with a fillet of fish in beurre blanc, or lightly seared scallops.
Best served at around 8°C.(46F°)
