Age of the vines: 30 years in average
Cultivation of the vineyard: Organic vine-growing as to respect the environment and obtain the best organoleptic grapes’ quality. The vines grow on a trellising and on partly grass-covered ground.
Wine-making and maturing: Slow direct pressing using a horizontal pneumatic press. Fermentation and ageing take place in vertical Clayver stoneware jars of 400 and 700 litres. Aged for 10 months in jar, with bottling on 12 September 2024.
Wine tasting: With a canary yellow hue tinged with gold, the Les Huttières cuvée reveals a typical Chenin nose with ripe yellow fruits and linden blossom. The character of the schist terroir comes through with a hint of fresh yeast. This leads to a saline, dense and structured palate.
Best served with: Pair the Les Huttières with fresh, briny dishes that echo the wine’s salinity and acidity. It is ideal with refined cuisine such as scallop tartare or oysters. You can also opt for Loire Valley goat’s cheese, such as Crottin de Chavignol. Best decanted and served between 11 and 12°C. (52 - 53 F°)
