Ageing:
5 years to keep all the freshness and the intense fruity aromas, but can also be kept up to 10 years.
Conduct of the vineyard:
Organic vine-growing as to respect the environment and obtain the best organoleptic grapes’ quality. The vines grow on a trellising and on partly grass-covered ground.
Wine making and maturing:
Late harvest wine from grapes partly to completely covered with noble rot. Traditional wine-making and maturing in stainless steel heat-regulated tanks. Tartaric stabilisation in cold room.
Wine tasting:
Brilliant golden robe. Very fresh and delicate, with aromas of exotic and citrus fruit.
The mouth reveals to be rich and creamy. Mid-palate is well-balanced between sweetness and freshness, developing all the exotic fruit aromas, from pineapple to candied mango or fig. These flavors linger in a long and delicious finish.
Pairings:
As an aperitif wine with blue sheep’s cheese like Roquefort, or foie gras.
As a dessert wine with tatin tart or chocolate mousse.
Service:
Ideally between 8 and 10°C (46 to 50°F)
