Type of soils: Clay and schists
Age of the vines: 40 years old in average
Cultivation of the vineyard: Organic vine-growing as to respect the environment and obtain the best organoleptic grapes’ quality. The vines grow on a trellising and on partly grasscovered ground.
Wine-making and maturing: Late harvest wine from grapes partly to completely covered with noble rot.
Traditional wine-making and maturing in stainless steel heat-regulated tanks.
Tartaric stabilisation in cold room.
Wine-tasting: This wine with an intense yellow colour, has a nose of well ripe, sometimes even candied citrus and exotic fruit, such as pineapple. The mouth is hearty and has both aromas of very ripe fruit, as well as a delicious fresh finish.
Best served: As an aperitif wine with blue sheep’s cheese like Roquefort, or foie gras. As a dessert wine with tatin tart or chocolate mousse. Ideally between 8 and 10 C (46 to 50 F)
Aging potential: 5 years to keep all the freshness and the intense fruity aromas, but can also be kept up to 10 years, with changing aromas.
