Grape varieties: 80 % cabernet franc and 20 % cabernet sauvignon
Type of soils: clay and schists
Age of the vines: 40 years old in average
Cultivation of the vineyard: Organic vine-growing as to respect the environment and obtain the best organoleptic grapes’ quality. The vines grow on a trellising and on partly grass-covered ground.
Wine-making and maturing: Traditional pelicular maceration. Fermentation in stainless steel heat-regulated tanks. Maturing also in stainless steel tanks for at least a year. Tartaric stabilisation in cold room.
Wine tasting: Garnet-red robe.
Nose: freshness with well ripe red berries’ aromas
Mouth: hearty with concentrated aromas of small red berries like blackcurrant. Tannins are present but melted, which creates a full-bodied mid-palate, with both intensity and balance. The tasting finishes on lingering notes of toast and spices, which give complexity to this wine.
Best served with: Roasted and spit-roasted meat, game. Cheese (goat cottage cheese, camembert, young brie...). Ideally decanted and at about 16°C (60°F)
